I am updating my will and I am wondering can I leave the copyright to all my photos to another person (I am assuming I can?) so that when I die, the ownership of all my files will transfer over.

Yes. It's no different than assigning copyright while you are alive. Speak to a lawyer though to be sure that it is done correctly.

If you do nothing, they will remain in your estate, and the executors of the estate will have complete control over them.
