Keep it simple, is my advice. Brush with olive oil, sprinkle liberally with kosher salt, fresh-ground pepper, and perhaps a dusting of minced fresh rosemary. If you like a garlicky outside, that's cool; before the oil, rub it with crushed garlic, but don't actually leave any garlic on it because it will burn and taste nasty.

I start my rib roasts at 325 degrees, then slam it up to 475 degrees for the last 20 minutes or so to get a crust. Some do it the other way, but in my experience that produces an overcooked zone around the perimeter. The roast should definitely be on a rack in its pan, though if you don't have one the bones will stand it up OK.

If you have a big enough roasting pan, you can take some small red or white potatoes, toss them with a little olive oil, sprinkle with kosher salt, and roast them along with the meat. Turn them once during cooking. Let them crust up nice and go all soft on the inside.

Meat is done when thermometer reads about 118 in the thickest portion; be sure not to measure the temperature too close to the bone, cuz bones conduct heat. That's for rare. When you take it out, cover it loosely with foil and let it rest before carving. This is critical, the juices need to be redistributed from the surface back into the meat. How long you rest it depends on how big it is; maybe 20 mins for a 3-rib roast, 30 mins for a 5-rib roast. The residual heat will continue to cook it, and you'll have nice rare meat. There will be some more-done meat on both ends. If nobody eats rare,n and you want medium-rare to medium, cook to internal temp of about 128, then rest as above.

To carve, if the meat has been taken off the bones and tied back on by the butcher, just remove the strings and carve the meat, crosswise, at least a quarter inch thick. If the meat is still on the bones, use a boning knife to separate it first, then carve. Much easier. Save the bones for some nice BBQ ribs tomorrow, unless someone wants to eat them at dinner.

I am finishing,up mine right now. Here is all I did. Simple is my preference.

Preheat oven to 350. Season your rib as you would prefer (I use salt, fresh black pepper and garlic). Roast for 1 hour. Turn the oven off but leave it in there until an hour before you need it (mine set for a couple of hours actually). Turn your oven back on to 350 and let go for another 45 minutes to an hour. Should come out to be a nice medium rare. I also roast my potatoes in the last cook as well. Good luck!

I got a projector and screen. I now have a 100" (diagonal) TV screen. Goes great with the speakers I've got. *grin*

Now the only problem I have is the light colored drapes on the windows. I've got to darken them up some.

I gave myself a Canon 5d and a Canon 16-35 mm EF lens. Now I'm just waiting for the storm to calm so I can go outside and play.

An official Wallace and Gromit calendar, a book I've already read two or three times, DVDs I can't play in Japan because I don't have a multi-region player, and a book on Matisse. Oh, and the boardgame Taboo, which I can't see being played in Japan very much, so they may change it.

I got this really cool combination record player and cd recorder. I can take all my old records (and I have a s---load) and make them into cd's. I did two today, Dreamboat Annie by Heart and The Nylon Curtain by Billy Joel. That was one.

And for my photo passion? My husband bought me an external hard drive for me to put all my photos into a different place from my regular computer. So how many photos will 500 gb get me? Will I have enough space for a few thousand?

Oh yeh, and one more unexpected present. We got pink eye, so the family had to stay home today and eat chocolates and mac and cheese.
