When looking around for a (CF) card reader, I've noticed that a lot of them only list Compact Flash I & II in their compatibility columns, so does this mean that cards like Sandisk's Extreme III & IV wouldn't work in these readers?

Compact Flash type I and II refer to the form-factor. Type II is thicker than type I. The numbers in the Sandisk designations are only for their own reference (the numbers increment whenever they bring out a newer, faster version). They are Type I.
