I am working on a photo in which I would like to convert to black and white, but have just the flowers in color. I am using photoshop elements 6.0, and have seen many photos with this done, but cannot seem to figure out how it was done. If anyone has any step by step process they would like to share, Id be much appreciative. Below is the picture I would like to edit. Thank you!!!

One way is to do the conversion on a new layer, then erase the parts you want to remain in colour. Just so you know, this method is not basic editing legal.

Thank you, it worked. I just tried it, and this is what I got.
However, I need to go over the edges of the flowers a little better, I have the right idea. Do you have any suggestions on how to get the lines perfect when erasing>?

Zoom in, in, in, in, in. Then zoom in some more. Now be extremely detailed and erase on a pixel by pixel basis. Tedious, but as perfect as you can get.

my workflow generally involves a fair amount of feathering - leaves any inconsistencies a lot less noticeable.

i use the paintbrush selector, and feathering (i never draw round a selection with the magic selector tool, that never seems to work for me)
