Hi I'm wondering if I'm spending too much time trying to get the "right one".

I decide to take a shot of a item. I will light it one way, the take several exposures, dof. etc... then I might change the lighting then go through the process all over again. By the time I'm done I might end up with 50 images just to get one that I deem the one I want to upload.

Am I being too fussy, wasting time?

what do you do?

thanks Bob

No way. That is how you learn about perspective, lighting and so on. Me lady and I used to do this thing called "take 5" where we took 5 random objects and we had to create an interesting composition solely from those items. It sure gets you thinking and forces creativity. I think you are along the right track. It may seem mundane but you will eventually see the benefit as it will most certainly improve the quality of your photos.

I usually do about 10 anymore I guess. I used to take a lot before I got what I wanted. Now I think I pay more attention(sometimes)when looking at my photos. I see what I like and don't like and the things I need or what to change on the next one. My way to approach this is to take a picture, process it like I was gonna submit it for a challenge, then come back the next day, sit there and look at it for awhile and ask myself "If I had to do this over again, what would I change about it. I also think if you look at a picture too long your mind begins to believe it looks OK when it's not.

Edit to add:
There are still days where I've took a hundred shots and threw them all out.

I'll take anywhere from 10 to 30 or more shots for a challenge entry. From there I'll review them on my PC. I'll delete the obviously crappy ones, and then narrow the field down to around 5 or so. I'll take a break and come back to try to narrow it down to 2. Sometimes I'll have another person help me narrow it down to the two finalists. From these two, I'll do some post-processing tests to see which of the two has the best potential. That's the one that I work on.

This is "generally" what I do. Sometimes it is not that cut-n-dry and the selection process takes much longer that you would think. Sometimes the two finalists don't do so well in the post-processing. In this case, I'll go back to the batch and start over (without these two).

I'd say I probably take 10-15 pics to get maybe 2 or 3 that I really like enough to submit.

I used to take tons with different lighting and angles and such as you mentioned but then after a while i got a real good idea what different light setups and angles would produce without having to take a bunch of test shots so now i take a lot less. I think the more you learn the less youll need to take, but you wont learn as well without seeing all those first images that explain to your brain what situations produce what photos. does that make sense?

Depends on the topic of the challenge but a minimum of 50 I guess. Usually many many more, sometimes several hundred, especially when macros are involved. I tend to take bracketed exposures and then bracketed focus too, then change lighting and go again.
