Post your recipes for quick and easy foods that normal people like. Nothing gourmet, fancy, or froo-froo, just "plain folk" kind of cooking. I'll start with a few I've learned from folks around and have tried them and know they work and that kids even like them! :)

Biscuit Dumplings

2 cans flake biscuits
1 ½ stick of butter or margarine
1 cup milk
1 cup sugar
1 tsp vanilla
½ cup chopped pecans
2 tablespoons of Cinnamon/Sugar

Spray 9x13 in pan with cooking spray. Separate and make a layer of biscuits in pan. Sprinkle with pecans and sprinkle with ½ of the cinnamon/sugar. Cover with remaining biscuits. Melt butter and pour over the top. Mix 1 cup sugar and 1 cup milk to pour over top. Sprinkle remaining cinnamon/sugar over top and bake for 25 minutes at 350°

Omelets in a Bag

Place 2 eggs well beaten in a 1 Quart Freezer Bag. Add anything you like in an omelet to the bag. Place the bag into a pan of boiling water. Cook for 12-15 minutes. Pour onto plate and enjoy!

Chocolate Cherry Dump Cake

2 cans Cherry pie filling
1 box chocolate cake mix
20 ounces 7-up (or any soda)

Spread Pie Filling on bottom of 9x13 pan. Cover with cake mix. Pour 7-up over the top and bake at 350° for 35-45 minutes.

Breakfast Casserole

1 lb Sausage (fried up)
1 package frozen shreadded potatoes
1 2 cup package shredded cheddar cheese
6 eggs
1/4 cup butter

Layer potatoes and sausage and cheese in a lightly greased casserole ( works great in a 8 x 11 cake pan. in a seperate bowl mix eggs together. Melt Butter. pour butter evenly over sausage, ptptato adn cheese mixture. pour eggs evenly over mixture.

Oven 350 F
approx 45 to 60 minutes

knife or toothpick has to come out clean when stuck into middle of pan

Baked French Toast Casserole with Maple Syrup

Recipe Summary
Difficulty: Easy
Prep Time: 20 minutes
Inactive Prep Time: 8 hours
Cook Time: 40 minutes
Yield: 6 to 8 servings

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

I am a former chef by trade and worked in many fine dining restuarants and hotels. Now I am a personal chef for my wife and two kids. This sidedish comes up often next to meatloaf, BbQ brisket, baby back ribs, anything grilled or basically just anything.

Jiffy Corn Casserole

1 Box Jiffy COrn bread Mix
2 Eggs
1 Cup Sour Cream
1 Can Corn Kernels and liquid
1 Can Creamed Corn
1/4 Butter Melted

Combine all ingredients except Corn Bread mix and blend well. Blend in corn
bread mix and mix til smooth - do not overmix. Pour into ungreased baking dish
and bake at 400' for an hour or until firm in center and golden brown. If you
want it sweeter add 1/4 cup sugar to initial mix.

Sweet & Sour Chicken

1 family pack of boneless, Skinless chicken
1 bottle French dressing
1 large jar apricot preserves
1 envelope lipton onion soup mix

mix dressing, preserves and soup mix in baking dish. Add chicken and mix well. place in preheated 350F oven uncovered for @45 minutes or until chicken is done. serve over rice. Enjoy!

additional note: if you have the time this is even better if the chicken is marinated throughout the day or overnight in the refridgerater.

My son Isaac's favorite side dish/snack:

-Place 3/4 cup frozen peas in a glass or microwave-safe bowl
-Eat one or two at a time, like popcorn.

Roast Cherry/ Baby Plum Tomato & Blue Cheese Risotto

Put a load of cherry or baby plum tomatoes onto a baking tray with just a touch of olive oil and leave to roast on medium heat for about half an hour (until most split/ slump/ get wrinkly).

In the meantime set some risotto rice to cook using a mild vegetable or chicken stock (from a cube) or just plain water. I never bother with that whole "add one ladle of liquid at a time" stuff - mine all goes in at once and it turns out just fine.

Once the risotto is cooked, stir in roughly chopped strong blue cheese (gorgonzola and roquefort are both good).

Divide roasted tomatoes over the top of each portioned plate and serve.

Oh and this is nice with sliced and pan fried leeks (use butter not oil) instead of the tomatoes too - in that case I stir the leeks in with the blue cheese rather than lay them on top.

Quick & tasty arrabiata pasta sauce!

Pour a tablespoon or two of olive oil into a pan.
Add minced garlic, finely chopped onion (I use the dried stuff) and crushed red pepper to taste (feel free to skip any of these or add your own stuff)
Simmer until the garlic turns brown but stop before it burns (you have to watch it close!)
Dump in a can of diced tomatoes, I prefer the petite diced tomatoes. Then turn the heat up all the way.
Add in some oregano and remove from heat once it starts bubbling.

Start to finish it takes about 5 minutes, quicker then it will take to get the pasta cooked, so start the pasta first.

You can also add chicken, meatballs or sausage to it. I cook this up for a quick lunch quite often. It’s surprisingly good for how simple and quick it is. Note that the better the tomatoes you use, the better the sauce is.

That sounds very neat and easy - I googled it a bit and I see this is a popular method for cooking eggs while camping, which makes a lot of sense. And cleanup is obviously a breeze. I can't wait to try this out.

The omelets in a bag are GREAT for large groups and gatherings too... have several bowls out of the favorite ingredients like ham, mushrooms, cheese, onions, whatever... and everyone makes their own, seals their bag, then have them write their name on the outside with a permanent marker and voila! Everyone's breakfast is done at the same time and all you have to do is throw away the baggies. The eggs come out perfectly puffy and fluffy, and there's no added fat from butter or margarine. Good, good stuff. :)

I'm gonna have to try these omelettes but... I'm not sure exactly what kind of freezer bags to use - I'm wondering whether we have the same kind here - do you just mean clear polythene(?) bags?

1. Open can of Stagg chili and dump into big mixing bowl.
2. Cover with Saran wrap and microwave for 3 minutes and 20 seconds on high.
3. Remove from microwave and add two teaspoons of super-hot chili sauce (sorry forgot the brand).
4. Tear up two pieces of whole wheat bread and mix it all up.
5. Enjoy!

Mexican "Fudge" (this tastes like a chile relleno)

8 ounces Monterey jack cheese
8 ounces Cheddar cheese
1 can chopped green chiles
1 cup milk or heavy cream (use cream for low carb version)
4 eggs

Heat oven to 350 degrees F

Grease 8-inch square glass casserole dish. Spread Monterey jack cheese on the bottom, and cover with green chiles. Spread Cheddar over the chiles.

Beat eggs with the milk or cream and pour over chile/cheese layers. Bake at 350 for 45 minutes.

Cut into 2-inch squares, and serve warm.

Real simple apple cake. No scale needed. Even my wife can do it. :-)

4 cups sliced apples
2 cups flour (not the self-rising type)
2 cups sugar
1/2 cup salad oil
2 eggs, well beaten
1 teaspoon of baking soda
1 teaspoon salt
2 teaspoon cinnamon

First mix the sliced apples with the sugar. Then add the eggs and the salad oil. Mix the other dry ingredients separatly, then add to the blend.
Grease a cake pan with butter and powder with flour; then pour the mix into it, and bake at 390F (200C) for an hour. After removing from the oven, wait for half an hour before removing from pan.

This makes a delicious apple cake that will stay fresh and tasty for 4-5 days!!

Potato/green bean/hamburger casserole

I've done this one, so you KNOW it's quick and easy :-)

You'll need: lb of ground beef, can of tomato soup, can of green beans, some mashed potatoes

First, make up a batch of mashed potatoes , however you like, real, boxed, frozen, whatever, then set them aside
Brown the ground beef however you like it, then mix it in a bowl with the green beans and tomato soup
Take a casserole dish, spread about 1/2 - 1 inch of your mashed potatoes on the bottom, then pour in and evenly spread your beef/bean/soup mixture, then another layer of potatoes on top
Bake at around 325 or so for around 30 min, or until the top just barely starts to brown at the tips

Options: throw some of your favorite cheese on the top, and if anything else sounds good, throw it in the mix!

The first time I tried this out, I was surprised with how good it was.
Now I'm looking for someone to post an easy recipe for taco salad :-)

Try this Tater--

Fry up some hamburger w/taco seasoning--

Crush "Original" Doritos by hand. Add Miracle Whip until you get the desired texture, people tastes vary.

Mix in the Hamburger and add any other indregiants you like, (IE Lettuce Tomatoes, Onions, Etc)

Its the Doritos/Miracle whip that makes it taste so frigging awesome, Sometimes I just mix up a big ol' bowl of that alone.

Good Shit Dip.

This tastes so great!!

1 box VELVEETA® Cheese (16-ounce), cubed
1 can HORMEL® Chili No Beans (15-ounce)

Directions
Place cubed cheese and chili in microwavable bowl. Microwave on HIGH for 5 minutes, stirring after 3 minutes. Serve hot with tortilla chips, French bread chunks or cornbread sticks. Makes 3¾ cups.

Thanks! That sounds like what I'm looking for. I have had taco salad at various types of 'pot luck' dinners, etc. and I love it. I knew there was more to it then just the obvious stuff mixed together. The miracle whip sounds like the key! Perhaps a trip to the market is in order.

Southern Poke Chops

4-5 thin pork chops
1 egg beaten
3 tablespoons worchestershire sauce
1 cup italian bread crumbs
1/4 cup flour

Heat some oil in a skillet (enough to coat bottom). Mix egg and worchest sauce in a bowl. Coat chops with flour, then egg mixture, and then bread crumbs. Place the chops in the skillet and fry about 10 minutes each side. These things will melt in your mouth.

My wife has some awesome recipes for salmon. If anyone's interested, I'll post 'em when she gets home.

I'm also going to copy down all of the recipes in this thread, except for Strikeslip's of course. Someone should tell him that canned chili is For Emergency Use Only. :)

Yeah, just those clear bags. I recommend the heavy-duty freezer ones because they hold up best in the boiling water. Make sure the water is boiling before you put the baggie in it, and don't let the baggie hang over the side of the pan or it might melt to the outside of the pan. I have a huge stock pot that I use to boil the water in and the baggies all fit inside it nicely.

Oh, one more... dunno if you yankees eat Ro-Tel dip, but it's OMG good.

1 Can Ro-Tel tomatoes (or any tomatoes with green chile peppers), drained
1 lb Velveeta (or any other brand of pasteurized processed cheese food), cubed
1 lb ground and cooked hamburger or turkey

Brown the meat while you have the pound of cheese melting in a double boiler. After it's melted, add the meat and the tomatoes to it, mix well. Serve with tortilla chips or corn chips. MMMMMMMMM good.

i am fascinated by the omelette in a bag thing.

i will certainly attempt it...but i'll need a bigger pot, yes. and eggs would help. so would bags. hmm. shopping trip!!!!

The dish I'm making tonight!

Tator Tot casserole

2 lbs of hamburger

1 large can of Cream of Mushroom Soup

Cheese (I use colby/monterey jack mix, but a lot of people like velveeta)

Brown hamburger on stovetop (add salt, spices)

After hamburger is browned add in the cream of mushroom soup until it's warm. Take off stove top and layer on the bottom of a 9x13 pan. Then layer the cheese ontop of that (i use already grated stuff) then put a layer of tator tots all over the top. Bake in the oven at 350 degrees for 45 minutes.

Optional: I had another little layer of cheese after baking it and broil it on top of the tator tots....I like cheese :)
