Hindu Love Gods - "Raspberry Beret" (Prince) (HLG's whole album is really good)
10,000 Maniacs - "Because the Night" (Bruce Springsteen/Patti Smith)
Dread Zeppelin - well, pretty much anything by Led Zeppelin, especially "Stairway to Heaven"
Camper van Beethoven - "Pictures of Matchstick Men" (Status Quo)
Sid Vicious/Sex Pistols - "My Way" (Frank Sinatra)
Van Halen - "Oh Pretty Woman" "You're No Good"/"Where Have All the Good Times Gone?" (Roy Orbison, The Kinks)
Our Lady Peace - "Tomorrow Never Knows" (The Beatles)

And the previously mentioned "All Along the Watchtower" and "Hurt" are also excellent.

James Taylor's cover of Carole King's "You've Got A Friend"

Jimi Hendrix's cover of "The Star-Spangled Banner" (itself one of the earliest examples of "sampling" -- Key wrote new words to a "traditional" tune)

Jose Feliciano's cover of The Doors' "Light My Fire"

Paul Robeson's versions of the traditional "Shenandoah" and Jerome Kern's "Old Man River"

LOL -- I was just thinking about listing the Dead's version as a cover of what I think is a "traditional" song ...

I'm amazed (and pleased) at how many songs are getting listed which I not only know but have played :-)

Tool doing Led Zepelin's No Quarter though I love the original sooo much better. I was playing Led's version in my office one day and a 24 year old girl sitting in a chair by my desk commented "This is Led Zeppelin? My brother listens to them sometimes. When did they record that Tool song?" (she's a blond)

I never heard Weezer do it, but Bowling for Soup did it, and it's awesome! They also did a great cover of Summer of 69' too!

How about Nazareth covering Joni Mitchell's "This Flight Tonight". They do an unplugged version, too, which is just as good.
