Hello,
I am going to shoot an outdoor wedding reception and I have the sb-800 flash. Is it better to use the diffuser hood or the flash card at a 45 degree angle when taking pictures of people?

neither, get a Lightsphere II from Gary Fong

Lightsphere is the first choice but diffuser is anytime better than flash card.

Outdoors? I would adjust the flash -1/3 or -2/3 and not have anything over it. I would point it at the subject and let Nikon's excellent flash/metering do it's work.
