Well it won't be as extreme with your 10D. It's not going to be anywhere near 180 degrees. 8 (circular) and 15mm fisheyes are the only ones I've ever heard of. You could also opt for a 14mm rectilinear lens but those are corrected for distortion and aren't nearly as wide as the fish.

For examples...

Take a look at the MC Zenitar 16mm f2.8 fisheye. I ordered mine from a guy in Ukraine for $160 including shipping. It is very sharp on my Canon 300D and the distortion effect is less extreme than it would be on a full-frame sensor.

You can also find this lens in the U.S. at //www.kievcamera.com/product.php?ID=15

You can also convert any fisheye pictures to rectilinear using the Panotools plugin for Photoshop. //www.razziphoto.com/archives/000023.php

I've got the Sigma 15mm fish. As stated above, you don't get close to 180 degree FOV, cause of the 1.6 crop. Still a cool lens. Major downside relative to the more expensive Canon is the slow focusing speed. (The sigma doesn't have USM.)

It's a fun lens to use, though. I took this one of my son at the beach. Wanted to get a lot of sky in there, so I went with the fish.

The FoV you will actually get with a 15mm fisheye on a 1.6x crop camera (300D, 10D, 20D, etc.) is 89 degrees horizontal, 58 degrees vertical. The fisheye effect is definitely not that dramatic.
The 8mm fisheyes do get close to 180 degrees (177 deg horizontal) and will show dark corners on 1.6x cams. The 8mm fisheyes, also tend to have more CA and coma than the 15mm fisheyes. this si prolly not what you want for your intended application.
I'm very happy with the Canon 15mm fish, and the Sigma is well thought of as well. Those are your two choices if you need autofocus, otherwise the Zenitar is also a choice. If you buy the Zenitar, make sure you get the one iwth the native Canon mount, not the M42 with EOS adapter. This latter combination interferes with the mirror and WILL damage your camera.

Edit for typos

Got mine on eBay for US$130 shipping included. Great Sharp lens but manual focus and aperture setting only.

I paid extra to get the fixed canon eos mount -- not an m42 adapter.

my sigma 15/2.8 is rapidly becoming my favorite lens. moreso now that kirbic helped me find a quick way to de-fish for those (rare) occasions when i don't want the fisheye effect.

it's a GREAT lens...it stays on my cam for long periods of time.
