For a birding shoot:

Micro cloth/liquid lens cleaner
Better Beamer kit
Extra batteries and memory
Corded shutter release
Small bag of bird feed or bread
Industrial garbage bags, not Glad!
Electrical tape

The garbage bags can be used for many things. Garbage, Cover from rain or as a ground sheet, among many others. Two weeks ago, I found a new favourite use. Water mud proof thigh highs! Yeah, I know you may look silly. But for walking in knee high mud, it is worth it! Doing this let me cross an expanse of deep mud. Very cleanly... Even better it let me get in range of an Egret. While no one else, would brave the mud crossing, I was able to get nice detailed shots. Yeah, bonus.... Plus it's a simple process: Just step one leg, into one bag. Twist the air out, so the bag its form fitting. Then tie with electrical tape above the knee. Wrap it a few times around. Repeat for the other leg. Just make sure to use the real Industrial labelled bags, there is a big difference.

Mine varies but I really need to find a pack that has an ice chest section that will hold a six pack or a good bottle of wine and protect 2 glasses.

Camel back Hydration system is the bomb for that. Just get some collapsable cups and your set!

I carry an eyeglass repair kit. Lens cloths. Lens Pen, Sensor Pen. Though I never have used latter in the field. A penlight, a powerful one. Allen wrenches that fit the tripod. The quick-start manual for the 5D2. Polarizers and ND filters. Cable Release.

That all goes in the backpack, anyway. I have also a Pelican case for waterproof carrying. Not all the miscellaneous stuff finds its way into that case, it depends on where I'm going.

Peanut butter & jelly sammich
Chopped mammoth & sardine on whole wheat sammich for Grog
Change of underwear for when I take that truly incredible shot and wet myself
Spare loincloth in case I am channeling Grog when this happens
Attorney's business card for when I get caught changing Grog's loincloth in a public place

If you're a wine lover, check out some of the newer boxed wines on the market. I've heard good things about them from various backpackers. Here are some suggestions Backpacker magazine wine suggestions. REI carries Lexan and stainless steel wine glasses, if you want, as well.

For me, I'm a beer guy, so I'd suggest some of the high quality microbrews that come in cans that are brewed around my area. Look into some of the offerings from Oskar Blues or New Belgium, which both offer great beers in cans.

As for my camera bag... usually have an SB900 with me (which includes the gels, stand, 6" pc sync cord for trigger and diffusion cover), TTL cord, Cybersync triggers (often, but if I'm going light and know CLS will work, I'll just use that instead), polarizer, ND filter, Eclipse cleaning fluid (which compliments the Nikon microfiber cloth that's attached to my camera), allen wrench for QR plates, 4 extra AA batteries, ProBar, and two ball bungees to attach to whatever.

Often, though, I'll have just my camera and a single lens, with no camera bag at all.

ETA: There's always one of these balled up in there just in case, as well, tucked into the raincover of my bags.

If I am heading out for a hike I've got my "emergency bag" which has a first aid kid, a knife, matches, a lighter, bug repellent, a "cat trowel" and roll of TP. Plus some snacks and my Camelbak. (Grog ain't the only one that's gotta stay hydrated!)

HEY!!!! I did too do the makeshift leggings and brave the mud when I was there with you!! And you had the 500mm and TC up, on a full-frame body...of course you got detailed shots!!! jeez! ;-)

Now what might I have in my camera bag that nobody else has...oh yeah, some of those little desiccant packs. Pen, notepaper, beef jerky of gorp, 2-way level for tripod (never used it once) and the usual spare batteries of all kinds and backup cards, lens cleaning cloth and kit, etc.
