Color is just so.... last yearish. B/W is the new HDR.

How would I do this? With the monitor profiles? I know this must be easy but I can't think of a way off hand atm.

Another easy way to achieve the "edit in grayscale" effect is to put a Channel Mixer Adjustment Layer set to monochrome mode on top of all of your other adjustment layers; you can toggle it on and off to compare the grayscale and color versions as you go.
