For all practical purposes that should be fine. If I were gonna pick nits, I'd point out that it doesn't really save you anything to do this. Your original, full-res file should be saved as a PSD anyway, right? So when you consider that each time you resize, you are adjusting the sharpening and saving-as jpg, just work like this:
1. Do all your basic editing on the PSD file and save it.
2. Now hit "image>duplicate" and you have a perfect copy. Resize and sharpen that, and save-as JPG, and close it.
3. Your original is still open: follow steps above, resizing to the new file dimensions, and close.
4. Do this for each image size you need.
In general, it's a good idea not to sharpen on top of sharpening for several generations, which is what you will be doing if you follow your original approach of progressively smaller resizings and resharpenings. But the differences, usually, will be small.
