Since scents and Aromas has been done... then how about touch or sound...or there is also the possibility of allowing the photographer to choose from one of the senses and then it is up to the viewer to interpret which sense is being demonstrated (and how clearly that is).
"Take a photograph in which a major element stimulates the sense of touch in your brain". This would include photos of anything that appear to have a tactile feel... examples might be the bottom of someone's dirty shoe, a pricked finger, etc...
or...
"Take a photograph that provides the viewer with a sense of sound". Examples might be a picture of some construction workers and a jackhammer, someone with headphones on, a stereo... etc.

Might be cool to have a challenge where a photograph must showcase a particular sense...
Examples: "Take a photo that suggests to the viewer a sense of smell" (photos might include a skunk, a rose, a freshly baked pie...)
Could also be accomplished with "touch", "sound", "taste".
