I did a picture of the Philadelphia skyline, they asked that I remove the Aramark sign on one of the buildings. Should I actually remove it (the top of the building) or just clone out the words?

Cloning out the words is fine.

After cloning; invert the image to make sure that the cloning looks good. Usually by inverting you can see if you did a good job cloning or not. |

Another trick is to load up a Curves adjustment (layer) and pull the curve all over in extreme fashion to see if you can separate the cloning from the BG. |
