We have a tree in our yard that is packed full with cherries, and I want to make cherry juice.
I have googled it without much luck :(

anyone have any sudjestions, or have done this before?

Never done cherry juice but my family has often enjoyed crab apple juice and I imagine the process would be similar (my horticultural ignorance would have me assume that the two fruits are fairly similar in their structure).

I found this site with a similar process to ours for extracting the juice. I'd suggest trying it on a small batch first just to be sure that this doesn't make some horrible tasting mulch or something like that (again, I'm not sure whether crab apples and cherries are compatible).

Hm. Once we tried to make grape juice with grapes from the vine in our backyard. We just put the grapes in water in an plastic jug and put it in our fridge. It fermented. Ick.

yep i would agree.

My family also may a pile of crab apple juice every summer and used that method. I thought it would be the same as that but others were sceptical to my idea so i thought i would do a little research. I'll give it a try though.

I have an apple press, I make quite a bit of cider every year. A full size press like mine would be overkill for a single cherry tree but they do make table top sized presses that would be suitable. Might be more work than you're interested in though. You'd want to pit them first for maximum juice extraction.

yeah, i was hoping to avoid pitting them (using the boiling method)

I found this.. there's a little bit at the very bottom about how to make cherry juice from fresh, sour cherries, but I'm not sure that it's really any help:

Recipe for Cherry Juice

1. Fresh Cherry………..1 Kg
2. Sugar………………..2 Kg
3. Citric Acid…………. 10 Gm
4. Sodium Benzoate 3 Gm
5. Water 2 Lit

Wash and boil Cherry in 1 lit of water for 10 min. Make it cool, mash with hand and sieve it through kitchen sieve and save the liquid. You may wear Kitchen gloves to mash it.

Boil 2 kg of sugar in 1 Lit water and add citric acid to it. Cool it to room temp. Mix the above juice with this sugar solution and add Sodium Benzoate. Sodium Benzoate is a preservative and the juice will last for a year. You may store it in bottles.
Dilute this juice with 4 to 5 times water to drink it.

You may use any fresh fruit pulp Instead of Cherry.

Do not forget to send a bottle of it for me through FedEX ;-)

well it at least confirms that boiler to make a sirup for concentrate can work.

Use fresh lemon juice accordingly,if you do not find citric acid. Store the juice bottles in fridge if you do not add sod. benzoate. It should be consumed within 2 weeks.
We make juice of all seasonal gruits like Mangoes,Litchi, Lemon,Straw Berry, plums and many more ...

Any homebrew/wine making supply will have the preservatives you need. If you're not sensitive to sulfites then campden tablets (potassium metabisulfite) are very convenient and easy to use.

For ordering online Beer, Beer, and More Beer is good although I suggest checking your phone book, you probably have one in or near where you live.

Citric acid adds sourness to the Juice (Squash)which is very essential even if the fruit is sour.
There is no need to keep the bottles in the fridge and it will last for a year if you add sod. Benzoate 1gm per Kg of the material.
You can substitute campden tablets if you are not alergic to it.

Choose only ripe cherries. They have full flavour. After 10 min. boiling, take out a cherry with a spoon, cool it and try to crush with fingers.Boil for more time if they are still hard.

well these are sweat cherries (not sure if that is the right ones) but they were easy to crush before i started boiling them. they were soft supple and full of juice.

Fresh Cherry………..1 Kg
Sugar………………..2 Kg
Water 2 Lit
The total above weight is 5Kg X 5 times dilution with water before u drink= 25 Kg drinkable volum.
If u find that it is more sweet, u can further dilute it.Use only chilled water to dilute before u drink.
07/15/2006 04:50:43 AM · #21
I guess when you put it that way

25 kg = 25 Liters of juice.. 2 kg of sugar perhaps isn't THAT much... 8% i guess. not that i am a health freak or anything, I love sweet things, it just looked like a lot when i was dumping it into the water.. but now i have a nice syrupy mixture.

wear only thick latex gloves and not fabric gloves ;-)

If u do not have citric acid, u can add lemon juice even when u want to drink.

U can use bare hands to crush the material. This is only if u do not have thick latex gloves.
