Hey guys -- what should my friend use as a free photo editing software on an old Mac?

DarkTable and GIMP.
I'm slowly weening myself off of the subscription BS that is Adobe and moving to both myself.

I've no experience with DarkTable, but I do with GIMP. The biggest issue with GIMP is that it *still* does not support non-destructive editing. That's huge, and it would certainly be a show-stopper for me. For folks that are just getting started with photo editing it may not be a big deal. If I were teaching someone, I would absolutely be teaching them to edit non-destructively.

An admittedly clumsy workaround for this is to continuously save copies as you edit, then go back and delete the earlier versions (not the original!) once you are satisfied with the final version.

Yep, and the lack of non-destructive editing doesn't mean there is no ability to "undo." It's just that there is limited ability to revert. Continually doing "save as" alleviates some of that.

I'm not familiar with Dark Table -- but I thought I heard GIMP was rather non-intuitive. Is that true? This is a newbie

I found GIMP somewhat non-intuitive but chalked it up to being so familiar with Photoshop. GIMP does try to be a relatively sophisticated editor, so it would by nature be potentially overwhelming for a newbie.
Photoshop Elements is still available as a one-time purchase (non-subscription) and may be a better bet for someone just getting their feet wet, however I don't know whether the system requirements would be a show-stopper.

the native photos app isn't bad if they are only looking for small adjustments

If starting from scratch, it's no different than PS.
