SNAPPER SOUP

3 1/2 lb Veal knuckle
1 c Chicken fat
1 x *or:
1 c Butter
3 qt Broth, beef
1 x *or:
4 qt Broth, beef
2 c Wine, dry sherry
1 c Flour
1 ea Turtle **
2 ea Carrot, diced
3 ea Onion, finely chopped
2 ea Celery, sticks, chopped
1/4 ts Thyme
1/2 ts Marjoram
1 ea Bay leaf
3 ea Cloves, whole
3 ea Sl Lemon
1 d Tabasco
1 x Salt & pepper
1 ea Egg, hard boiled, chopped
2 c Tomato, strained

** Meat from one snapper turtle, cut in small pieces.
Have knuckles broken into 2 inch pieces. Place
knuckles in a roasting pan and add the butter or
chicken fat, onions, celery, carrots, thyme, marjoram,
cloves, bay leaf, salt and pepper. Bake at 400-F until
brown. Remove from oven and add flour, mixing well and
cook 30 minutes longer. Pour browned mixture into a
large soup kettle, add the broth and tomatoes, and
cook slowly for 3-1/2 hours. Combine the snapper meat
with 1 cup sherry, some salt, the tabasco and lemon
slices, and simmer for 10 minutes. Strain the soup and
combine the two mixtures. Add the chopped egg and the
balance of the sherry and serve immediately.

Peas? You didn't mention it should be stuffed with peas. No wonder it did not taste as expected, I'll have to redo it.

Something I just noticed on this shot that I really like is the way the greenery in the background mimics the the shape of the turtles right um... foot? Paw? what do you call them on turtles. Anyway I like how the shape is mimicked.

Cute. I like the softness of the photograph but I think if the turtle were processed on a different layer with a little more contrast or added blacks it would stand out more. I can show you what I mean after the challenge is over if you'd like. (just pm me)

I love how detailded the turtle is, the green in the background, and the title, which explains it all. I like the composition of round and curly shapes in the background.

Coming back to comment and bumping up the score as well. O.K. the turtle and the humor of the photo made me think of Alfred Bester's short story "Gourmet Dining in Outer Space". The chef in the story is hilarious and one course he made was turtle soup. But I am rambling away from the shot. Love the humor in the shot -it tips the scales away from the normal shelled out recipes;-p Details and color and composition are great. Love the bokeh backdrop with the eggs and greens that will be added to the soup. The turtle seems to be haming it up for the camera and the audience. My only plaint is the composition could use a dash more saturation and contrast between shadows/highlights - not too much mind, just a pinch more to bring it up a notch because it looks a tad washed out.
